Healthy-ish Chocolate Muffins

For as much as I love to eat, I’ve never really been a breakfast person. I know, I know it’s the “most important meal of the day” and all, but let’s just get real. Eating bacon,eggs, biscuits,pancakes and other heavy foods first thing in the morning makes me feel kind of blah for the rest of the day, and even though I love yogurt it’s more of an afternoon snack item for me.

Enter muffins. Muffins are delectable. Muffins are tasty, perfectly portioned morsels of baked awesomeness. Muffins aren’t kidding anyone, they’re cupcakes in disguise. 

Now even though I do love to make muffins from scratch, sometimes it’s just not feasible with my busy work schedule. The recipe I’m going to share with you today is one of those that’s been around for a while so you may already know it. It’s also so easy it should be illegal for you to call these muffins homemade. But you can. So here you go, you can thank me later!

What you need:

  • Box of chocolate cake mix- I had Devils Food on hand, but use whatever you’ve got
  • 2 eggs
  • 1 can of pumpkin purée (not the pumpkin pie filling…that would be weird)
  • Chocolate chips- I used about 3/4 cup

Alright, that’s all you need. For reals. It’s that easy. Combine all of your ingredients together working to get everything incorporated. Your batter will be thick- it’s supposed to be. If you need to you can add a dash of water to make it stirrable but you really don’t have to. Divide your batter into 12 parchment lined muffin cups and bake at 375 degrees for about 30 minutes. Voila! You’re done!


Pat yourself on the back and have a cup of coffee! You deserve it. 😊
